Ghee is a butter with its milk solids removed which results in high smoke point and, rich and better flavour. It has a sweet-salty caramelized flavour and creamy texture. It is commonly used in Indian cuisine but has paved its own way through the American kitchen. It has a smoke point of 450 F as compared to the 350 F of ordinary butter. In Indian cuisines, ghee can be used in lieu of either butter or oil?nothing is different, regardless of origin. INGREDIENTS:

  • 2 ¼ cups all-purpose flour
  • 1 tsp sea salt
  • 1 tsp baking soda
  • 1 cup loosely packed brown sugar
  • ½ cup granulated cane sugar
  • ½ cup unsalted butter, softened
  • ½ cup ghee, softened but not liquid
  • 1 tsp vanilla extract
  • 1 tbsp water or non-dairy milk, as needed

Approximately ½ cups bittersweet chocolate chips or chopped dark chocolate

  1. Preheat the oven to 375 degrees. Line a baking sheet with parchment paper, silicone mat, or oil with a vegetable spray.
  2. Mix flour, salt, and baking soda, and set aside.
  3. Cream together the softened butter, ghee, and both sugars. Make sure the mixture is smooth and fluffy. Add in vanilla and milk or water, and mix.
  4. Add in the dry ingredients and fold until almost combined. Keep mixing until it resembles a cookie dough. When squeezed, the mixture should stick together and not crumble. Then, fold in the chocolate chips.
  5. Portion out the cookies onto the baking sheet as desired. Press the cookie down a little to flatten them if desired. Bake for 5 minutes and let it continuously bake while it cools on the pan.
