Aubergine/Eggplant Medium (pack of 2)

Also known as eggplant or brinjal.

Aubergines are used in a variety of cuisines across the world and are great at soaking up flavours due to their spongy, absorbant texture.

Grill until charred for a smoky baba ganoush, simmer in a curry or stir fry with sezchuan spices. Aubergines are also a delicious vegetarian BBQ option - simply pierce with a knife and cook whole until the skin is blistered and the flesh is completely soft. Slice in half and drizzle with a herby dressing or a tahini sauce for a middle eastern inspired treat.
