Ingredients:

- 1 cup Basmati rice

- 2 cups mixed vegetables (e.g., carrots, peas, bell peppers)

- 1 large onion, thinly sliced

- 2 tomatoes, chopped

- 2-3 tablespoons Fudco Biryani Masala

- 1/2 cup yogurt

- 2 tablespoons cooking oil or ghee

- 2-3 cloves of garlic, minced

- 1-inch piece of ginger, grated

- A handful of fresh cilantro leaves, chopped

- A handful of fresh mint leaves, chopped

- Salt to taste

- Water

Instructions:

  • Wash the rice thoroughly and soak it in water for 30 minutes. Drain and set aside.
  • Heat oil or ghee in a large, heavy-bottomed pot. Add the sliced onions and sauté until they turn golden brown. Remove half of the fried onions and set them aside for garnish.
  • Add the minced garlic and grated ginger to the pot. Sauté for a couple of minutes until the raw smell disappears.
