Bacon, Onion and Cheddar Flatbread

Ingredients

  • 500 grams of Aashirvaad Atta flour
  • 30 grams of yeast
  • 100 grams of grated cheddar
  • 3 Rosemary sprigs
  • 8 bacon rashers
  • 1 onion (sliced thinly)
  • 300 ml. of water
  • 3-4 tablespoons of rapeseed oil (canola oil)
  • 20 grams of salt
  • 20 grams of butter

Procedure:

  1. Grill the bacon for 2-3 minutes or until it turns slightly brown, remove excess oil from the bacon using kitchen paper and cut into small chunks.
  2. In a heavy-based saucepan, melt the butter, stir fry the onions for 2 minutes, and then season with salt and cover. Turn down the heat to a low setting to avoid burning the butter.
  3. Once the onions are caramelized, remove them from heat and set them aside to cool down.
  4. For the bread, combine flour and yeast (activate by combining water and sugar, set aside until it turns frothy); once both ingredients are integrated (here you can opt to put it in a mixer or knead by hand), use extra flour to help you in kneading and make a smooth elastic dough.
  5. As you knead, season it with salt.
  6. Once done, turn your dough into a round ball, place it in a clean bowl and cover with a clean cloth. Let it proof for an hour.
  7. After an hour, your dough should double in size. Start punching down to release the air and roll out your dough.
  8. Preheat the oven at 180°C.
  9. In a baking pan (dust with flour), layout your dough and spread the caramelized onions across the entire surface; sprinkle the bacon, cheese, rosemary sprigs, and salt. Dust with flour to finish.
  10. Pour water into a roasting tray and put it in the oven. This will create steam while your bread bakes.
  11. Place your dressed bread in the oven and cook for 15 minutes, then take it out, spray some water over it, and then put it back in the oven. Repeat this twice with 3 minutes intervals until the bread has risen and cooked through.
