Vegetable Biryani Recipe:
Ingredients:
- 1 cup Basmati rice
- 2 cups mixed vegetables (e.g., carrots, peas, bell peppers)
- 1 large onion, thinly sliced
- 2 tomatoes, chopped
- 2-3 tablespoons Fudco Biryani Masala
- 1/2 cup yogurt
- 2 tablespoons cooking oil or ghee
- 2-3 cloves of garlic, minced
- 1-inch piece of ginger, grated
- A handful of fresh cilantro leaves, chopped
- A handful of fresh mint leaves, chopped
- Salt to taste
- Water
Instructions:
- Wash the rice thoroughly and soak it in water for 30 minutes. Drain and set aside.
- Heat oil or ghee in a large, heavy-bottomed pot. Add the sliced onions and sauté until they turn golden brown. Remove half of the fried onions and set them aside for garnish.
- Add the minced garlic and grated ginger to the pot. Sauté for a couple of minutes until the raw smell disappears.
- Add the chopped tomatoes and cook until they become soft and the oil begins to separate.
- Stir in the Fudco Biryani Masala and cook for a minute or two to toast the spices. Adjust the quantity based on your spice preference.
- Add the mixed vegetables and sauté for a few minutes.
- Mix in the yogurt, cilantro, and mint leaves. Cook for another 2-3 minutes.
- Add the drained rice to the pot and sauté for a couple of minutes, ensuring the rice is well coated with the spices and vegetables.
- Pour in enough water to cover the rice and vegetables (usually about 2 cups of water for 1 cup of rice). Season with salt.
- Cover the pot with a tight-fitting lid and simmer on low heat for about 15-20 minutes or until the rice is cooked and the water is absorbed. You can also use a rice cooker if preferred.
- Once the biryani is cooked, fluff it gently with a fork. Garnish with the reserved fried onions.
- Serve your flavorful Fudco Biryani Masala Vegetable Biryani hot with raita (yogurt sauce) or a side salad.
